Veganism is a philosophy and way of living that:-

seeks to exclude as far as is possible and practicable all forms of animal exploitation and cruelty for food, clothing or any other purpose promotes the development and use of animal-free alternatives for the benefit of humans, animals and the environment.

In dietary terms it denotes the practice of dispensing with all products derived wholly or partly from animals.

“Vegan” or “Vegetarian”? “純素食”與“素食”？

純素食者（VEGAN，發音為VEE-GAN）的生活方式是避免依賴動物產品，以利益他人包括動物和環境。採用植物性飲食同時，避免採用任何與動物身體有關連的製品。許多人選擇不穿皮革，羊毛或絲綢。這也可以稱為蔬食或菜食。

一般素食者（Vegetarian）：這名稱廣泛應用於一般人士傾向減少對動物產品的依賴和消費，其中會有不同的素食名稱代表不同程度的素食者。通常先從他們的飲食中除去肉類開始，進一步逐漸去掉蛋類、乳類。直到只吃植物性食物為主的階段，成為純素食者。

華人社會中，有部分素食者會戒吃五辛，如蔥、大蒜、韭菜、小蒜（蕎頭）、興蕖（洋蔥）等植物。
